Herby Green Falafel

Crispy on the outside and tender inside, these herby falafel are packed with chickpeas, greens, fresh herbs and bright lemony flavour.
Ingredients
- 1 tbsp A Sprinkle of Sunshine
- 1 can chickpeas, drained and rinsed
- 1 onion, finely chopped
- 1 cup frozen peas, lightly thawed
- 2 tbsp white chia seeds
- 1 cup broccoli, finely chopped
- 2 cups kale leaves, shredded and firmly packed
- 1 cup fresh flat-leaf parsley leaves
- 1/2 cup fresh mint leaves
- 1 1/2 tsp cumin
- 1/2 tsp baking powder
- Extra-virgin olive oil, for brushing
- 1 tsp sesame seeds
Directions
Preheat oven to 425�F / 220�C. Line a large baking sheet with parchment paper.
Add the chickpeas, onion, peas, chia seeds, broccoli, kale, parsley, mint, cumin, baking powder and A Sprinkle of Sunshine to a food processor. Pulse until very finely chopped and well combined.
Shape the mixture into patties using about 2 tbsp per falafel and arrange on the prepared baking sheet. Brush generously with olive oil and bake for 15 minutes. Brush again with oil and bake for another 15 minutes, or until golden and crisp.
Serve with arugula, warm flatbread, sliced radishes and labneh. Finish with sesame seeds.
