Quebec Maple Baked Beans

Rich, smoky and slow-cooked with classic Qu�bec flavours, these hearty baked beans are pure comfort food.
Ingredients
- 2 tbsp Quebec Maple Smoked Salt
- 450g dried navy beans
- 250g salt pork or 6 bacon strips, chopped
- 1 onion, chopped
- 2 garlic cloves, finely chopped
- 1/4 cup maple syrup
- 1/4 cup blackstrap molasses
- 2 tbsp tomato paste
- 5-6 cups water
Directions
Place beans in a large bowl and cover with water. Soak for 8-12 hrs at room temperature, ensuring beans remain fully submerged. Drain and rinse.
Preheat oven to 300�F with rack in the middle position.
In a large Dutch oven or ovenproof dish, layer half the pork, onion, and garlic, then cover with half the beans.
Repeat with remaining pork mixture and beans.
In a separate bowl, mix Quebec Maple Smoked Salt, maple syrup, molasses, and tomato paste.
Pour over the beans. Add enough water (about 5-6 cups) to just cover the beans.
Cover and bake for 4 hrs, or for a slower, deeper cook, bake at 200�F for 8 hrs, until the beans are tender and the sauce is rich and thickened.
Let rest for a few minutes before serving.
Slow cooker: Follow the same steps and cook on low for 8-12 hrs.
