Aglio Bolognese
There is nothing quite like a rich and creamy Bolognese sauce, simmering on the stove all afternoon and served over hot buttery pasta. With a generous pinch of Aglio Napoletano, this recipe may just become your new go-to.
1 lbs ground beef (for vegetarian, 2 cans of lentils)
½ lbs ground pork
3 tbsp Aglio Napoletano
1 cup milk
1 cup white wine
1 can (28oz) Italian plum tomatoes
Grated Parmigiano-Reggiano

Over medium heat, melt 3 Tbsp of the butter and olive oil in a large pot.
Add the chopped onion, and stir until it has become translucent, then add the Aglio Napoletano, celery and carrot. Cook for about 2 minutes, stirring well.
Add ground beef and pork and a generous pinch of salt.
Separate the meat with a wooden spoon and cook until the meat is a light brown color.
Add the milk and let it simmer gently, stirring frequently for about 2 minutes.
Add the wine, simmering until it has evaporated, then add the tomatoes and juice. Stir until the mixture begin to bubble, then lower the heat low.
Cook uncovered, for 3 hours or more, stirring occasionally.
If the sauce thickens too much, add ¼ cup of water at a time during cooking.
Serve with pasta, and top generously with Parmigiano-Reggiano.
Bolognese à la Aglio
Il n'y a rien comme une sauce bolognaise riche et crémeuse, mijotant sur la cuisinière tout l'après-midi et servie sur des pâtes chaudes et onctueuses. Avec sa généreuse dose d'Aglio Napoletano, cette recette pourrait bien devenir votre nouvel incontournable.
Dans une grande casserole à feu moyen, faire fondre le beurre et ajouter l'huile d'olive.
Ajouter l'oignon et remuer jusqu'à ce qu'il devienne translucide, puis ajouter l'Aglio Napoletano, le céleri et les carottes. Cuire environ 2 minutes en remuant bien.
Ajouter le bœuf et le porc et une généreuse pincée de sel.
Défaire la viande à l’aide d’une cuillère en bois et cuire jusqu'à ce que la viande soit brun clair.
Ajouter le lait et laisser mijoter doucement en remuant fréquemment pendant environ 2 minutes.
Ajouter le vin et laisser mijoter jusqu'à évaporation, puis ajouter la boîte de tomates (les tomates et le jus). Remuer jusqu'à ce que le mélange commence à bouillonner, puis baisser à feu doux.
Cuire à découvert, pendant 3 heures ou plus, en remuant de temps en temps.
Si la sauce épaissit trop, ajouter ¼ de tasse d'eau à la fois.
Servir sur des pâtes et garnir généreusement de Parmigiano-Reggiano.
